Pineapple & Mint Tea Granita with Peppermint Leaf

Serves: 4

Ingredients

• 2 g Peppermint Leaf
• 1 cup water
• 2 cups fresh pineapple, peeled, cored and finely diced
• 1 tablespoon finely chopped fresh mint
• ¼ cup Vanilla Bean Sugar
• 1 tablespoon lemon juice

Method

1. Heat 1 cup water to 212°F. Steep the Peppermint Leaf for 5–7 minutes, then strain or remove the tea bag.
2. Dissolve the sugar in the tea and let cool. Blend with the fruit, fresh mint and lemon juice.
3. Pour into a shallow freezer-safe dish. Freeze for 3–4 hours, scraping with a fork every 30–45 minutes, until flaky. Spoon into four chilled bowls.
