How to brew
- Tea: 4 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 5–10 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 7 cups per ounce (28.35 g), using 4 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Strawberry & Lime Tea Fruit Compote with Strawberry Blossom
Serves: 4
Ingredients
- 4 g Strawberry Blossom
- 1 cup water
- 2 cups hulled strawberries, sliced
- 1 teaspoon finely grated lime zest
- 2 tablespoons Lemon Sugar
- 1 teaspoon lemon juice
Method
- Heat 1 cup water to 212°F. Steep the Strawberry Blossom for 5–10 minutes, then strain or remove the tea bag.
- Place the fruit, strained tea, sugar and lime zest in a saucepan. Simmer gently for 10–15 minutes, stirring occasionally, until the fruit softens and the juices thicken slightly.
- Stir in the lemon juice. Spoon over toast or plain yogurt; refrigerate any remainder promptly.
