Sour Cherry
Sour Cherry is a bold, ruby-toned herbal cup with a sweet-tart cherry style. Try it chilled, plain or as a base for a sparkling tea float.

How to brew
- Tea: 4 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 5–10 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 7 cups per ounce (28.35 g), using 4 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Cherry & Almond Tea Ice Pops with Sour Cherry
Serves: 6 small pops
Ingredients
- 4 g Sour Cherry
- 1 cup water
- 2 cups sweet cherries, pitted and halved
- 2 tablespoons toasted sliced almonds
- 2 tablespoons Vanilla Bean Sugar
Method
- Heat 1 cup water to 212°F. Steep the Sour Cherry for 5–10 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the strained tea and cool. Blend with the fruit and almonds.
- Pour into freezer-pop molds, leaving a little space for expansion. Insert sticks and freeze until solid, at least 6 hours.
