Broccoli & Mushroom Butter Bean Gratin with Sesame Seed, Black

Ingredients
- 1 teaspoon Sesame Seed, Black
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups small broccoli florets
- 2 cups sliced mushrooms
- 1 tablespoon neutral cooking oil
- 2 cans (15 oz each) butter beans, drained and rinsed
- ½ cup vegetable broth
- ½ cup breadcrumbs
- ¼ cup grated Parmesan
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the oven to 375°F.
- Heat the neutral oil in a large skillet over medium heat. Add small broccoli florets and sliced mushrooms. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Combine the beans, vegetables, broth and seasoning mixture in a baking dish. Mix breadcrumbs with Parmesan and scatter over the top. Bake for 20–25 minutes, until golden and bubbling.
