Carrot & Fennel White Bean Mash with Paprika (Hungary) Powder

Serves: 4

Ingredients

  • 2 teaspoons Paprika (Hungary) Powder
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups carrot, cut into ½-inch pieces
  • 2 cups thinly sliced fennel bulb
  • 1 tablespoon neutral cooking oil
  • 2 cans (15 oz each) white beans, drained and rinsed
  • ½ cup vegetable broth
  • 2 tablespoons chopped fresh parsley

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the neutral oil in a large skillet over medium heat. Add carrot, cut into ½-inch pieces and thinly sliced fennel bulb. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  3. In a saucepan, heat the beans and broth for 5 minutes, then mash roughly. Stir in half the seasoning mixture.
  4. Spoon the bean mash into four bowls. Top with the vegetables, remaining seasoning mixture and parsley.
