Yue Guan Bai, also called Moonlight White, is a Yunnan tea that sits between familiar white-tea and pu-erh traditions in the store’s original notes. Its dry leaf has a floral, woody and hay-like aroma.

How to brew

  • Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 185°F (85°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Banana & Cinnamon Tea Jelly Cups with Old Tree Yue Guan Bai, Moon Light White Pu'erh

Serves: 4

Ingredients

  • 2 g Old Tree Yue Guan Bai, Moon Light White Pu'erh
  • 1 cup water
  • 1 cup ripe banana, sliced
  • ¼ teaspoon Cinnamon (Vietnamese) Powder
  • 2 teaspoons unflavored powdered gelatin
  • ½ cup cold water
  • ½ cup unsweetened apple juice
  • 2 tablespoons Cinnamon Sugar

Method

  1. Heat 1 cup water to 185°F. Steep the Old Tree Yue Guan Bai, Moon Light White Pu'erh for 3–5 minutes, then strain or remove the tea bag.
  2. Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and cinnamon into the hot, strained tea.
  3. Whisk the hot tea into the softened gelatin until completely dissolved. Add the apple juice.
  4. Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.
