This is a green tea leaf blend with matcha powder, rather than a tin of pure matcha for whisking. The matcha adds color and a fuller green-tea character to the brewed leaves.

Our earlier product notes described a sencha and matcha combination. Steep this blend at the cooler green-tea temperature below, then strain the leaf; check the current package if you need the exact matcha percentage or origin of the leaf.

Ingredients: Green Tea, Matcha Powder

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Lychee & Lime Tea Jelly Cups with Matcha Green Tea

Serves: 4

Ingredients

  • 2.5 g Matcha Green Tea
  • 1 cup water
  • 1 cup drained canned lychees, diced
  • 1 teaspoon finely grated lime zest
  • 2 teaspoons unflavored powdered gelatin
  • ½ cup cold water
  • ½ cup unsweetened apple juice
  • 2 tablespoons Lemon Sugar

Method

  1. Heat 1 cup water to 175°F. Steep the Matcha Green Tea for 2–3 minutes, then strain or remove the tea bag.
  2. Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and lime zest into the hot, strained tea.
  3. Whisk the hot tea into the softened gelatin until completely dissolved. Add the apple juice.
  4. Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.
