Lemon verbena is an aromatic leaf with a strong, fresh lemon fragrance and a rounded citrus-herbal flavor. It brings a lemon note to tea without the sharp acidity of juice.

Steep it alone or pair it with mint, berries or green tea. The dried leaf also works in light syrups and desserts; follow the package directions and strain the leaf after brewing.

How to brew

  • Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 212°F (100°C)
  • Steep time: 5–7 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Peach & Basil Tea Yogurt Bowls with Lemon Verbena

Serves: 2

Ingredients

  • 2 g Lemon Verbena
  • 1 cup water
  • 1 cup ripe peach, pitted and diced
  • 1 tablespoon finely chopped fresh basil
  • 1½ cups thick plain Greek yogurt
  • ½ cup granola
  • 2 teaspoons Vanilla Bean Sugar

Method

  1. Heat 1 cup water to 212°F. Steep the Lemon Verbena for 5–7 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and chill completely.
  3. Stir ¼ cup cold tea and the fresh basil into the yogurt; reserve the remaining tea to drink. Layer the yogurt, fruit and granola in two bowls and serve immediately.
