Lemon peel is the outer skin of the citrus fruit of the same name, which is technically referred to as the exocarp. The peel actually consists of two components - the flavedo and the outer white pith of the rind. Because the peel is where the essential oils of the fruit reside, it retains robust flavor, even when dried.

Peach & Basil Spiced Breakfast Quinoa with Lemon Peel, c/s

Serves: 2

Ingredients

  • 1 teaspoon Lemon Peel, c/s
  • 1 cup water
  • 1 cup ripe peach, pitted and diced
  • 1 tablespoon finely chopped fresh basil
  • ½ cup dry quinoa, rinsed
  • 2 teaspoons Vanilla Bean Sugar

Method

  1. Simmer the root or peel in 1 cup water, covered, for 8 minutes. Strain out the pieces and top the liquid back up to 1 cup.
  2. Bring the prepared mixture and quinoa to a gentle boil in a saucepan. Cover, reduce heat and simmer for 15 minutes, until tender.
  3. Rest off the heat for 5 minutes. Fluff and fold in the fruit, fresh basil and sugar. Divide into two breakfast bowls.
