Lemon Balm, Organic
Organic lemon balm is an aromatic leaf with a bright lemon scent and a softer green, herbal taste. Its citrus fragrance makes it easy to blend with mint, berries and other mild herbs.
Steep it for a simple caffeine-free cup, or use the dried leaf sparingly in rice, vegetables, poultry or fish. It also works in a chilled herb infusion with lemon slices; follow the package for serving directions.
How to brew
- Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 5–7 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Strawberry & Basil Tea Breakfast Quinoa with Lemon Balm
Serves: 2
Ingredients
- 2 g Lemon Balm
- 1 cup water
- 1 cup hulled strawberries, sliced
- 1 tablespoon finely chopped fresh basil
- ½ cup dry quinoa, rinsed
- 2 teaspoons Vanilla Bean Sugar
Method
- Heat 1 cup water to 212°F. Steep the Lemon Balm for 5–7 minutes, then strain or remove the tea bag.
- Bring the strained tea and quinoa to a gentle boil in a saucepan. Cover, reduce heat and simmer for 15 minutes, until tender.
- Rest off the heat for 5 minutes. Fluff and fold in the fruit, fresh basil and sugar. Divide into two breakfast bowls.
