Coconut-Lime Leaf Mushroom Soup

Ingredients

  • 2 leaves Kaffir Lime Leaves
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 2 cups sliced mushrooms
  • 1 cup chopped bok choy
  • 1 can (13.5 oz) coconut milk
  • 2 cups vegetable broth
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon lime juice

Method

  1. Place the dried lime leaves in a closed spice bag so they can be removed completely.
  2. Soften the mushrooms in olive oil for 5 minutes. Add the ginger, broth, coconut milk and spice bag; simmer gently for 10 minutes.
  3. Stir in the bok choy and cook for 2–3 minutes, until tender. Remove the spice bag and finish with lime juice. Do not eat the whole lime leaves.
