Imperial Pai Mu Tan White Peony
This is the freshest and full-bodied of our delicate white teas, and once steeped you will appreciate how complex and delicate this fine tea is. Experience a beautiful light golden tea liquor that has a heady aroma of stone fruit, and fresh-cut grass. Its flavor is sweet and fruity and has a fresh green grass character, it finishes with flowery heady notes and very little astringency.

How to brew
- Tea: 2 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 180°F (82°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 14 cups per ounce (28.35 g), using 2 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Papaya & Lime Tea Semolina Pudding with Imperial Pai Mu Tan White Peony

Ingredients
- 2 g Imperial Pai Mu Tan White Peony
- 1 cup water
- 1 cup ripe papaya, peeled, seeded and diced
- 1 teaspoon finely grated lime zest
- ¼ cup fine semolina
- 1 cup milk or oat milk
- 2 tablespoons Lemon Sugar
Method
- Heat 1 cup water to 180°F. Steep the Imperial Pai Mu Tan White Peony for 3–5 minutes, then strain or remove the tea bag.
- Combine the strained tea, milk, sugar and lime zest in a saucepan. Bring to a gentle simmer.
- Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
