Horseradish is a plant in the mustard family, which makes it related to wasabi, broccoli and cabbage. Like its cousins, the plant has a reputation for possessing a strong flavor and aroma.

Carrot & Cauliflower Ricotta Toasts with Horseradish Powder
Serves: 4
Ingredients
- ¼ teaspoon Horseradish Powder
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups carrots, cut into ½-inch pieces
- 2 cups small cauliflower florets
- 1 tablespoon neutral cooking oil
- 8 slices crusty bread
- 1 cup ricotta
- 2 tablespoons chopped fresh basil
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the neutral oil in a large skillet over medium heat. Add carrots, cut into ½-inch pieces and small cauliflower florets. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Toast the bread and spread with ricotta. Toss the cooked vegetables with the seasoning mixture, spoon over the toasts and finish with basil.
