Hojicha is a roasted Japanese green tea whose reddish-brown leaves brew a light, toasted cup. Our tasting notes describe nutty, gently sweet notes with a hint of caramel rather than the grassy character of many other green teas.

Use the short steep in the guide below and enjoy the tea warm after a meal, or chill it for a mellow iced cup. Its roasted flavor also pairs well with figs and walnuts in the fruit salad recipe on this page.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 195°F (91°C)
  • Steep time: 1–2 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Fig & Walnut Tea-Dressed Fruit Salad with Hojicha

Serves: 4

Ingredients

  • 2.5 g Hojicha
  • 1 cup water
  • 2 cups ripe fresh figs, stemmed and chopped
  • 2 tablespoons finely chopped toasted walnuts
  • 1 cup halved seedless grapes
  • 1 tablespoon Vanilla Bean Sugar
  • 1 tablespoon lime juice

Method

  1. Heat 1 cup water to 195°F. Steep the Hojicha for 1–2 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and chill. Whisk ¼ cup cold tea with the lime juice and walnuts; reserve the remaining tea to drink.
  3. Toss the fruit and grapes with the dressing. Let stand in the refrigerator for 15 minutes before serving.
