Gyokuro Premier is an organic Japanese green tea whose leaves are shade grown before harvest. Our tasting notes describe a deep-colored cup with a silken mouthfeel, savory depth and a slight buttery quality.

Use the preparation guidance below for a short, gentle first steep so the leaf stays smooth. Taste it plain, then try another infusion of the same leaves to explore its lighter green and sweet notes.

Preparation: Use 1-1.5 tsp of tea per 8oz/200ml of water. Heat water to 175F/80C and steep for 1.5-2 minutes.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: 1.5–2 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Strawberry & Basil Tea Boba Cooler with Gyokuro Premier

Serves: 2

Ingredients

  • 2.5 g Gyokuro Premier
  • 1 cup water
  • 1 cup hulled strawberries, sliced
  • 1 tablespoon finely chopped fresh basil
  • ¼ cup quick-cooking tapioca pearls
  • 2 teaspoons Vanilla Bean Sugar
  • ½ cup cold water
  • Ice

Method

  1. Heat 1 cup water to 175°F. Steep the Gyokuro Premier for 1.5–2 minutes, then strain or remove the tea bag.
  2. Stir the sugar into the tea and chill. Cook the tapioca pearls according to their package, drain and let cool slightly.
  3. Mash or blend the fruit with the fresh basil and cold water. Divide the pearls between two glasses, add ice, then the fruit mixture and tea. Serve immediately with spoons or wide straws.
