Guayusa
Guayusa is a naturally caffeinated holly leaf (Ilex guayusa), served as a South American botanical infusion. It is distinct from yerba mate and from Camellia sinensis tea.

How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 185°F (85°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Lychee & Lime Tea Sorbet with Guayusa
Serves: 4
Ingredients
- 2.5 g Guayusa
- 1 cup water
- 2 cups drained canned lychees, diced
- 1 teaspoon finely grated lime zest
- ¼ cup Lemon Sugar
- 1 tablespoon lemon juice
Method
- Heat 1 cup water to 185°F. Steep the Guayusa for 3–5 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the tea and cool. Blend the tea, fruit, lime zest and lemon juice until smooth.
- Freeze in a shallow container until firm, about 4 hours. Break into chunks and pulse in a food processor until creamy. Return to the freezer for 30 minutes, then scoop.
