Greek mountain tea is an herbal infusion made from dried mountain herb material. Its gentle herbal aroma makes a simple cup on its own; check the package for the specific botanical species.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 212°F (100°C)
  • Steep time: 5–7 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Mango & Lime Tea Semolina Pudding with Greek Mountain Tea

Serves: 2

Ingredients

  • 2.5 g Greek Mountain Tea
  • 1 cup water
  • 1 cup ripe mango, peeled and diced
  • 1 teaspoon finely grated lime zest
  • ¼ cup fine semolina
  • 1 cup milk or oat milk
  • 2 tablespoons Lemon Sugar

Method

  1. Heat 1 cup water to 212°F. Steep the Greek Mountain Tea for 5–7 minutes, then strain or remove the tea bag.
  2. Combine the strained tea, milk, sugar and lime zest in a saucepan. Bring to a gentle simmer.
  3. Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
