Fig & Walnut Tea Slush with Rooibos

Serves: 2

Ingredients

• 2.5 g Rooibos
• 1 cup water
• 1 cup ripe fresh figs, stemmed and chopped
• 2 tablespoons finely chopped toasted walnuts
• 2 teaspoons Vanilla Bean Sugar
• ½ cup cold unsweetened apple juice
• ½ cup ice

Method

1. Heat 1 cup water to 212°F. Steep the Rooibos for 5–7 minutes, then strain or remove the tea bag.
2. Stir the sugar into the tea and cool. Freeze the tea in an ice-cube tray until solid.
3. Blend the tea cubes, fruit, walnuts, apple juice and additional ice to a spoonable slush. Serve immediately in two glasses.
