Kiwi & Mint Tea Ice Cooler with Peppermint Leaf

Serves: 2

Ingredients

• 2 g Peppermint Leaf
• 1 cup water
• 1 cup kiwifruit, peeled and diced
• 1 tablespoon finely chopped fresh mint
• 2 teaspoons Vanilla Bean Sugar
• 1 cup chilled white grape juice
• 1 cup chilled plain sparkling water

Method

1. Heat 1 cup water to 212°F. Steep the Peppermint Leaf for 5–7 minutes, then strain or remove the tea bag.
2. Dissolve the sugar in the tea, cool and pour into an ice-cube tray. Freeze until solid.
3. Divide the tea cubes and fruit between two glasses. Add the fresh mint, grape juice and sparkling water. Stir gently; the tea flavor develops as the cubes melt.
