Fukamushi means deep steamed. This Japanese sencha style is steamed longer than a standard sencha, making the leaf more finely broken and often giving the brew a vivid green color and a fuller texture.

Our tasting notes describe a rich jade-green cup with delicate sweetness, mild astringency and a clean vegetal finish. Use a fine strainer, pour slowly, and keep the first infusion brief to appreciate its smooth texture.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 175°F (79°C)
  • Steep time: ½–1 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Apple & Ginger Chocolate Tea Sundae with Fukamushi Sencha Kakegawa

Ingredients

  • 2.5 g Fukamushi Sencha Kakegawa
  • 1 cup water
  • 1 cup peeled, cored apple, finely diced
  • ¼ teaspoon Ginger Root, powder
  • ⅓ cup chopped dark chocolate
  • 2 teaspoons Vanilla Bean Sugar
  • 2 scoops vanilla ice cream

Method

  1. Heat 1 cup water to 175°F. Steep the Fukamushi Sencha Kakegawa for ½–1 minutes, then strain or remove the tea bag.
  2. Place the chocolate, sugar and ¼ cup hot brewed tea in a heatproof bowl. Stir until smooth; reserve the remaining tea to drink. Fold in the ground ginger.
  3. Divide the ice cream and fruit between two bowls and drizzle with the warm chocolate-tea sauce.
