Cumin is an annual member of the parsley family that is native to the Mediterranean. The seed of the plant, which is harvested by hand, is a staple in traditional cuisines of the region as much today as it was in ancient Greece, Rome and Egypt. Use whole cumin seed to add earthy flavor to soups, stews, chili, breads and cheese.

Broccoli & Corn Sheet-Pan Gnocchi with Cumin Seed, whole

Ingredients
- ½ teaspoon Cumin Seed, whole
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups small broccoli florets
- 2 cups thawed corn kernels
- 1 tablespoon neutral cooking oil
- 1 package (16 oz) shelf-stable potato gnocchi
- ¼ cup grated Parmesan
- 2 tablespoons chopped fresh basil
Method
- Lightly crush the seeds in a mortar before measuring.
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the oven to 400°F. Toss the vegetables and uncooked shelf-stable gnocchi with the neutral oil on a large rimmed baking sheet.
- Roast for 25–35 minutes, turning halfway, until the vegetables are tender and gnocchi edges are golden. Toss with the seasoning mixture, Parmesan and basil.
