Chokeberries
Chokeberries are dark, tart berries with an astringent finish. Their sharp fruit character is suited to blends and preparations that include sweeter berries or another balancing ingredient.
Simmer the dried berries and keep the softened fruit with its liquid for the blueberry ice pops below, or use a prepared infusion in syrup and fruit tea. Taste the mixture before sweetening, since the berry-to-sweetness balance will vary by recipe.

Blueberry & Coconut Spiced Ice Pops with Chokeberries
Serves: 6 small pops
Ingredients
- 1 tablespoon Chokeberries
- 1 cup water
- 2 cups blueberries
- 2 tablespoons unsweetened shredded coconut
- 2 tablespoons Vanilla Bean Sugar
Method
- Simmer the dried berries in 1 cup water, covered, for 8 minutes. Keep the softened berries in the liquid and top back up to 1 cup.
- Dissolve the sugar in the prepared mixture and cool. Blend with the fruit and shredded coconut.
- Pour into freezer-pop molds, leaving a little space for expansion. Insert sticks and freeze until solid, at least 6 hours.
