How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 212°F (100°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Cherry & Almond Chocolate Tea Sundae with Chocolate Chai Pu-erh

Ingredients
- 2.5 g Chocolate Chai Pu-erh
- 1 cup water
- 1 cup sweet cherries, pitted and halved
- 2 tablespoons toasted sliced almonds
- ⅓ cup chopped dark chocolate
- 2 teaspoons Vanilla Bean Sugar
- 2 scoops vanilla ice cream
Method
- Heat 1 cup water to 212°F. Steep the Chocolate Chai Pu-erh for 3–5 minutes, then strain or remove the tea bag.
- Place the chocolate, sugar and ¼ cup hot brewed tea in a heatproof bowl. Stir until smooth; reserve the remaining tea to drink. Fold in the almonds.
- Divide the ice cream and fruit between two bowls and drizzle with the warm chocolate-tea sauce.
