Chimichurri is an Argentinian herb sauce mixed with olive oil, red wine vinegar, and a lemon wedge. It is often served with steak and other meats such as fish, chicken, or roast beef. It’s also delicious mixed with pasta, slathered on garlic bread, or blended into rice to make a fragrant herb pilaf. Using chimichurri as a marinade in grilled dishes, like beef skewers, is also popular as it adds incredible flavor.

Green Bean & Mushroom White Bean Mash with Chimichurri

Ingredients

  • 1 teaspoon Chimichurri
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups trimmed green beans, cut in half
  • 2 cups sliced mushrooms
  • 1 tablespoon neutral cooking oil
  • 2 cans (15 oz each) white beans, drained and rinsed
  • ½ cup vegetable broth
  • 2 tablespoons chopped fresh parsley

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the neutral oil in a large skillet over medium heat. Add trimmed green beans, cut in half and sliced mushrooms. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  3. In a saucepan, heat the beans and broth for 5 minutes, then mash roughly. Stir in half the seasoning mixture.
  4. Spoon the bean mash into four bowls. Top with the vegetables, remaining seasoning mixture and parsley.
