Chicory Root Roasted
Roasted chicory root has a deep, toasted aroma and an earthy, pleasantly bitter taste. It has a long culinary history as a coffee companion or caffeine-free coffee-style drink.
Simmer the root according to the guide below, strain, and enjoy plain or with milk. Its roast character also works in stout-style recipes and in blends with cocoa or warm spices. The recipe below uses it as a base for a chilled chia dish.

How to brew
- Chicory: 4 g roasted root per 8 fl oz (240 ml) water.
- Water temperature: 212°F (100°C), then reduce to a gentle simmer.
- Steep time: Simmer gently, covered, for 10 minutes, then strain.
- Cups per ounce: Approximately 7 eight-ounce cups per ounce (28.35 g), using 4 g per cup. Yield varies with strength and counts the first brew only.

Banana & Peanut Spiced Chia Pots with Chicory Root Roasted

Ingredients
- 1 teaspoon Chicory Root Roasted
- 1 cup water
- 1 cup ripe banana, sliced
- 1 tablespoon smooth peanut butter
- ¼ cup chia seeds
- 2 teaspoons Vanilla Bean Sugar
Method
- Simmer the roasted chicory in 1 cup water, covered, for 5 minutes. Strain out the root and top the liquid back up to 1 cup.
- Dissolve the sugar in the prepared mixture and cool. Stir in the chia seeds and peanut butter. Stir again after 10 minutes to break up clumps.
- Cover and refrigerate for at least 4 hours. Divide into two bowls and top with the fruit.
