This balsamic vinegar from Modena, Italy, is complex, rich and tart. Its depth of flavor comes from the barrel aged balsamic vinegar that is blended with sparkling white French champagne vinegar. We love it in vinaigrette, roasted meats and vegetables, red meat and venison.

Green Bean & Mushroom Sesame Noodle Bowls with Champagne Balsamic
Serves: 4
Ingredients
- 2 tablespoons Champagne Balsamic
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- ⅛ teaspoon Black Peppercorn Ground Fine
- 2 cups trimmed green beans, cut in half
- 2 cups sliced mushrooms
- 1 tablespoon neutral cooking oil
- 8 oz dry rice noodles
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- 2 tablespoons Sesame Seed, Hulled (toast before measuring)
Method
- Whisk the featured balsamic with the olive oil and black pepper.
- Prepare the rice noodles according to the package and drain.
- Heat the neutral oil in a large skillet over medium heat. Add trimmed green beans, cut in half and sliced mushrooms. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Stir the soy sauce and sesame oil into the seasoning mixture. Toss with the noodles and vegetables, adding a splash of water if needed. Scatter over sesame seeds.
