Celery & Tomato Tomato-Braised Butter Beans with Cayenne, Ground

Ingredients
- a scant ⅛ teaspoon Cayenne, Ground
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups thinly sliced celery
- 2 cups chopped tomatoes
- 1 tablespoon neutral cooking oil
- 1 can (15 oz) butter beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- ½ cup vegetable broth
- 2 tablespoons chopped fresh parsley
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the neutral oil in a large skillet over medium heat. Add thinly sliced celery and chopped tomatoes. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Stir in the beans, tomatoes and broth. Simmer gently for 12–15 minutes, until the sauce thickens slightly. Finish with the seasoning mixture and parsley.
