Ingredients: Apple, Rosehips, Natural Peach Flavor, Pineapple, Chamomile, Lemon Verbena, Peach

How to brew

  • Tea: 4 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 212°F (100°C)
  • Steep time: 5–10 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 7 cups per ounce (28.35 g), using 4 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Peach & Basil Tea Sorbet with Calming Peach

Serves: 4

Ingredients

  • 4 g Calming Peach
  • 1 cup water
  • 2 cups ripe peach, pitted and diced
  • 1 tablespoon finely chopped fresh basil
  • ¼ cup Vanilla Bean Sugar
  • 1 tablespoon lemon juice

Method

  1. Heat 1 cup water to 212°F. Steep the Calming Peach for 5–10 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and cool. Blend the tea, fruit, fresh basil and lemon juice until smooth.
  3. Freeze in a shallow container until firm, about 4 hours. Break into chunks and pulse in a food processor until creamy. Return to the freezer for 30 minutes, then scoop.
