Bi Luo Chun
Bi Luo Chun is a Chinese green tea traditionally associated with the Dongting area of Jiangsu. Its small, curled leaves give the style its name, often translated as green snail spring.

How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 175°F (79°C)
- Steep time: 2–3 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pear & Pistachio Chilled Tea Fruit Soup with Bi Luo Chun
Serves: 2
Ingredients
- 2.5 g Bi Luo Chun
- 1 cup water
- 2 cups ripe pear, cored and diced
- 2 tablespoons chopped shelled pistachios
- 2 teaspoons Vanilla Bean Sugar
- ¼ cup unsweetened apple juice
Method
- Heat 1 cup water to 175°F. Steep the Bi Luo Chun for 2–3 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the tea and refrigerate until cold.
- Blend the tea, half the fruit, apple juice and pistachios until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
