Pineapple Ghost-Pepper Black Bean Salsa
Serves: 4
Ingredients
- 1 rice-grain-sized piece of Bhut Jolokia Pepper
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lime juice
- 1 cup finely diced pineapple
- 1 cup canned black beans, drained and rinsed
- 2 tablespoons finely chopped red onion
- 1 tablespoon chopped fresh cilantro
- A pinch of salt
Method
- Wear gloves and use clean kitchen shears to snip off a rice-grain-sized piece of pepper. Avoid contact with your eyes and face.
- Warm the olive oil gently over low heat with the tiny pepper piece for 1 minute; do not let it smoke. Remove and discard the pepper piece, then cool the oil.
- Toss the fruit, vegetables or beans, onion and cilantro with the cooled oil and lime juice. Season lightly and serve in small portions.
This is an extremely hot pepper; begin with the tiny amount stated and do not substitute a whole pepper.
