Brussels Sprout & Apple Vegetable Skewers with Applewood Smoked Steak Seasoning

Serves: 4

Ingredients

  • 1 teaspoon Applewood Smoked Steak Seasoning
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups Brussels sprouts, trimmed and quartered
  • 2 cups cored apple, cut into ½-inch pieces
  • 1 tablespoon neutral cooking oil
  • 4 metal skewers
  • ½ cup plain yogurt
  • 2 tablespoons chopped fresh parsley

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. For firm root vegetables, simmer the pieces for 6–8 minutes first, until just tender; drain. Thread the prepared vegetables onto metal skewers.
  3. Brush with the neutral oil. Grill over medium heat for 10–15 minutes, turning, until tender and browned. Brush with the seasoning mixture after grilling. Serve with yogurt and parsley.
