Ali Shan High Mountain
Ali Shan High Mountain is an oolong from Taiwan’s Alishan area. The shop’s original notes describe hand-picked, hand-processed jade-green leaf with a few stems retained and a light roast.
The brewed cup has a deep floral aroma, a light buttery sweetness and a rich, lasting mouthfeel. Taste it plain first, then steep the leaf again to see how the floral and roasted notes shift.

How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 185°F (85°C)
- Steep time: 2–3 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Mango & Coconut Tea Granita with Ali Shan High Mountain
Serves: 4
Ingredients
- 2.5 g Ali Shan High Mountain
- 1 cup water
- 2 cups ripe mango, peeled and diced
- 2 tablespoons unsweetened shredded coconut
- ¼ cup Vanilla Bean Sugar
- 1 tablespoon lemon juice
Method
- Heat 1 cup water to 185°F. Steep the Ali Shan High Mountain for 2–3 minutes, then strain or remove the tea bag.
- Dissolve the sugar in the tea and let cool. Blend with the fruit, shredded coconut and lemon juice.
- Pour into a shallow freezer-safe dish. Freeze for 3–4 hours, scraping with a fork every 30–45 minutes, until flaky. Spoon into four chilled bowls.
