Blueberry & Lavender Sweet Semolina Pudding with Rose Sugar

Serves: 2

Ingredients

2 tablespoons Rose Sugar
1 cup water
1 cup blueberries
½ teaspoon finely grated lemon zest
¼ cup fine semolina
1 cup milk or oat milk
2 tablespoons Lavender Sugar

Method

Stir the Rose Sugar into 1 cup warm water until evenly mixed.
Combine the prepared mixture, milk, sugar and lemon zest in a saucepan. Bring to a gentle simmer.
Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
