Apricot & Vanilla Sweet Sorbet with Peach Sugar

Serves: 4

Ingredients

• 2 tablespoons Peach Sugar
• 1 cup water
• 2 cups ripe apricot, pitted and diced
• ¼ teaspoon vanilla extract
• ¼ cup Vanilla Bean Sugar
• 1 tablespoon lemon juice

Method

1. Stir the Peach Sugar into 1 cup warm water until evenly mixed.
2. Dissolve the sugar in the prepared mixture and cool. Blend the prepared mixture, fruit, vanilla extract and lemon juice until smooth.
3. Freeze in a shallow container until firm, about 4 hours. Break into chunks and pulse in a food processor until creamy. Return to the freezer for 30 minutes, then scoop.
