Thyme is a member of the mint family grown as a culinary herb and an ornamental groundcover.
The plant’s delicate, green-grey foliage is highly aromatic and yields a warm, slightly peppery flavor. Dried thyme leaf is added to tea blends, soups, stews and sauces and pairs especially well with eggs and cheese.
It may help rebalance gut flora (parasites, yeast, bacterial overgrowth). Often used at the first sign of illness or during short-term immune challenges.

Parsnip & Pear Tomato-Braised Butter Beans with Thyme
Serves: 4
Ingredients
- 1 teaspoon Thyme
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups peeled parsnip, cut into ½-inch pieces
- 2 cups firm pear, cored and diced
- 1 tablespoon neutral cooking oil
- 1 can (15 oz) butter beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- ½ cup vegetable broth
- 2 tablespoons chopped fresh parsley
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the neutral oil in a large skillet over medium heat. Add peeled parsnip, cut into ½-inch pieces and firm pear, cored and diced. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Stir in the beans, tomatoes and broth. Simmer gently for 12–15 minutes, until the sauce thickens slightly. Finish with the seasoning mixture and parsley.
