Carrot & Cauliflower Pita Pockets with Sage Powder

Serves: 4

Ingredients

  • ¼ teaspoon Sage Powder
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups carrots, cut into ½-inch pieces
  • 2 cups small cauliflower florets
  • 1 tablespoon neutral cooking oil
  • 4 pita breads
  • ½ cup hummus
  • ½ cup crumbled feta
  • 1 cup shredded lettuce

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Heat the neutral oil in a large skillet over medium heat. Add carrots, cut into ½-inch pieces and small cauliflower florets. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  3. Toss the cooked vegetables with the seasoning mixture. Warm and split the pita breads. Spread with hummus, then fill with lettuce, vegetables and feta.
