Nutmeg has a long history of use as a spice, with recorded evidence that the ancient Romans and Greeks enjoyed its warm, aromatic flavor and aroma.

Apple & Cardamom Spiced Semolina Pudding with Nutmeg, ground

Serves: 2

Ingredients

  • ⅛ teaspoon Nutmeg, ground
  • 1 cup water
  • 1 cup peeled, cored apple, finely diced
  • ⅛ teaspoon Cardamom Powder
  • ¼ cup fine semolina
  • 1 cup milk or oat milk
  • 2 tablespoons Vanilla Bean Sugar

Method

  1. Stir the Nutmeg, ground into 1 cup warm water until evenly mixed.
  2. Combine the prepared mixture, milk, sugar and cardamom in a saucepan. Bring to a gentle simmer.
  3. Whisk in the semolina in a thin stream. Cook 4–6 minutes, stirring, until thick and smooth. Divide between two bowls and top with the fruit.
