Garlic has been used as food and medicine for thousands of years, particularly in China, Egypt and Greece. As the properties of this herb became known throughout 17th century Europe, garlic was commonly infused in wine as a preventative tonic to the plague. During World Wars I and II, field physicians used garlic internally and externally on soldiers to fight infection and gangrene.

Garlic powder provides an easy way to enjoy the taste of garlic in food, or the powder can be encapsulated for use as a dietary supplement.

Mushroom & Roasted Pepper Pasta Toss with Garlic Powder

Serves: 4

Ingredients

  • 2 teaspoons Garlic Powder
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups sliced mushrooms
  • 2 cups drained roasted red peppers, sliced
  • 1 tablespoon neutral cooking oil
  • 8 oz dry penne pasta
  • ¼ cup grated Parmesan
  • 2 tablespoons chopped fresh parsley

Method

  1. Mix the featured seasoning with the olive oil and lemon juice.
  2. Cook the pasta according to its package; reserve ½ cup cooking water before draining.
  3. Heat the neutral oil in a large skillet over medium heat. Add sliced mushrooms and drained roasted red peppers, sliced. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
  4. Add the pasta, prepared seasoning mixture and enough reserved water to coat. Toss over low heat for 1 minute, then add Parmesan and parsley.
