What we call dill "seed" is actually the flat, brown fruits of dill weed.
Similar to caraway in flavor, dill seed is widely used in northern Europe as an ingredient in pickling seasoning and to flavor breads, cheese, meats and vegetables, especially potatoes and cabbage.

Beet & Carrot Pita Pockets with Dill Seed
Serves: 4
Ingredients
- 1 teaspoon Dill Seed
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups peeled beet, cut into ½-inch cubes
- 2 cups carrot, cut into ½-inch pieces
- 1 tablespoon neutral cooking oil
- 4 pita breads
- ½ cup hummus
- ½ cup crumbled feta
- 1 cup shredded lettuce
Method
- Lightly crush the seeds in a mortar before measuring.
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the neutral oil in a large skillet over medium heat. Add peeled beet, cut into ½-inch cubes and carrot, cut into ½-inch pieces. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Toss the cooked vegetables with the seasoning mixture. Warm and split the pita breads. Spread with hummus, then fill with lettuce, vegetables and feta.
