Celery seeds have a mildly spicy and slightly bitter taste with aroma and flavor notes similar to fennel. Whole seeds are added to pickling brines, soups and breads. Although it takes more than half a million seeds to equal a pound, the flavor in just a handful of seeds goes a long way in cooking.

Turnip & Onion Sheet-Pan Gnocchi with Celery Seed, whole

Serves: 4

Ingredients

  • ½ teaspoon Celery Seed, whole
  • 1 tablespoon Arbequina Extra Virgin Olive Oil
  • 1 tablespoon lemon juice
  • 2 cups peeled turnip, cut into ½-inch cubes
  • 2 cups onion, cut into thin wedges
  • 1 tablespoon neutral cooking oil
  • 1 package (16 oz) shelf-stable potato gnocchi
  • ¼ cup grated Parmesan
  • 2 tablespoons chopped fresh basil

Method

  1. Lightly crush the seeds in a mortar before measuring.
  2. Mix the featured seasoning with the olive oil and lemon juice.
  3. Heat the oven to 400°F. Toss the vegetables and uncooked shelf-stable gnocchi with the neutral oil on a large rimmed baking sheet.
  4. Roast for 25–35 minutes, turning halfway, until the vegetables are tender and gnocchi edges are golden. Toss with the seasoning mixture, Parmesan and basil.
