Apricot & Cardamom Spiced Jelly Cups with Anise Seed, Whole
Serves: 4
Ingredients
- 1 teaspoon Anise Seed, Whole
- 1 cup water
- 1 cup ripe apricot, pitted and diced
- ⅛ teaspoon Cardamom Powder
- 2 teaspoons unflavored powdered gelatin
- ½ cup cold water
- ½ cup unsweetened apple juice
- 2 tablespoons Vanilla Bean Sugar
Method
- Lightly crush the anise seeds. Simmer in 1 cup water, covered, for 5 minutes, then strain out the seeds. Top the liquid back up to 1 cup.
- Sprinkle the gelatin over the cold water and let bloom for 5 minutes. Stir the sugar and cardamom into the prepared mixture.
- Whisk the hot prepared mixture into the softened gelatin until completely dissolved. Add the apple juice.
- Divide the fruit between four small cups. Pour in the gelatin mixture and refrigerate for at least 4 hours, until set.

Flavor: sweet licorice-like aroma.
