Oolong Tea
Oolong teas linger somewhere between the oxidation of green and black teas. With a name that means ‘black dragon’, this type of tea combines the robust flavors of black teas with the lighter tastes of green teas. This Formosa oolong from Taiwan sits comfortably in the middle ground, featuring a complex and inherent sweetness swirled throughout a warm and inviting golden infusion. How to brew
- Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
- Water temperature: 195°F (91°C)
- Steep time: 3–5 minutes, then strain or remove the tea bag.
- Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.
Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Pear & Ginger Apple-Juice Tea Cooler with Oolong Tea

Ingredients
- 2.5 g Oolong Tea
- 1 cup water
- 1 cup ripe pear, cored and diced
- ¼ teaspoon Ginger Root, powder
- 1 teaspoon Vanilla Bean Sugar
- ½ cup chilled unsweetened apple juice
- ½ cup cold water
- Ice
Method
- Heat 1 cup water to 195°F. Steep the Oolong Tea for 3–5 minutes, then strain or remove the tea bag.
- Stir the sugar into the tea and chill. Mash the fruit with the ground ginger in a pitcher.
- Add the tea, apple juice and cold water. Divide between two ice-filled glasses.
