A legendary oolong tea from the Fujian province of China. Ti Kuan Yin (Iron Goddess of Mercy) is one of China's most beloved oolongs and is extremely time-consuming to produce (well over a dozen distinct steps in the processing are observed). Notes of toasted walnut and tender collard greens. Intriguing lingering floral aroma, lightly orchid, and gentle astringency.

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 185°F (85°C)
  • Steep time: 2–3 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Blackberry & Sage Tea Ice Cooler with Iron Goddess Of Mercy

Serves: 2

Ingredients

  • 2.5 g Iron Goddess Of Mercy
  • 1 cup water
  • 1 cup blackberries
  • ½ teaspoon finely chopped fresh sage
  • 2 teaspoons Vanilla Bean Sugar
  • 1 cup chilled white grape juice
  • 1 cup chilled plain sparkling water

Method

  1. Heat 1 cup water to 185°F. Steep the Iron Goddess Of Mercy for 2–3 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea, cool and pour into an ice-cube tray. Freeze until solid.
  3. Divide the tea cubes and fruit between two glasses. Add the fresh sage, grape juice and sparkling water. Stir gently; the tea flavor develops as the cubes melt.
