Formosa Oolong, also known as Taiwanese Oolong, is a type of oolong tea grown and produced in Taiwan. It is characterized by a darker style, with deep raisiny and ripe fruit aroma, and a lingering sweet flavor. The name "Formosa" comes from the Portuguese term "Ilha Formosa," meaning "beautiful island".

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 205°F (96°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Plum & Vanilla Chilled Tea Fruit Soup with Formosa Oolong

Serves: 2

Ingredients

  • 2.5 g Formosa Oolong
  • 1 cup water
  • 2 cups ripe plums, pitted and diced
  • ¼ teaspoon vanilla extract
  • 2 teaspoons Vanilla Bean Sugar
  • ¼ cup unsweetened apple juice

Method

  1. Heat 1 cup water to 205°F. Steep the Formosa Oolong for 3–5 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and refrigerate until cold.
  3. Blend the tea, half the fruit, apple juice and vanilla extract until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
