Big Red Robe, or Da Hong Pao, is a Wuyi-style oolong associated with the mountains of Fujian, China. Our original notes describe dark leaves and a fragrant, richly colored cup with floral depth.

The roasted character gives this oolong a fuller profile than a light green-style oolong. Follow the hot-water brewing guide below and try a second infusion to see how the fragrance changes after the first cup.

Ingredients: Oolong Tea

How to brew

  • Tea: 2.5 g of dry tea per 8 fl oz (240 ml) of water
  • Water temperature: 205°F (96°C)
  • Steep time: 3–5 minutes, then strain or remove the tea bag.
  • Cups per ounce: Approximately 11 cups per ounce (28.35 g), using 2.5 g per 8-fl-oz cup. This estimate counts the first infusion only.

Start with this guide and adjust to taste. A larger mug or stronger brew uses more tea and makes fewer cups per ounce.

Peach & Ginger Tea Yogurt Bowls with Big Red Robe

Method

  1. Heat 1 cup water to 205°F. Steep the Big Red Robe for 3–5 minutes, then strain or remove the tea bag.
  2. Dissolve the sugar in the tea and chill completely.
  3. Stir ¼ cup cold tea and the ground ginger into the yogurt; reserve the remaining tea to drink. Layer the yogurt, fruit and granola in two bowls and serve immediately.
