Turmeric Root Powder
Turmeric is a tropical plant related to ginger that is native to the forest wetlands of Southeast Asia. The plant has a tough rhizome that has been used in India for thousands of years to produce a golden dye. The dried, ground root is also the source of the spice turmeric, which is a staple in Indian and South Asian cuisines.

Zucchini & Pea Warm Potato Salad with Turmeric Root Powder

Ingredients
- 1 teaspoon Turmeric Root Powder
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups zucchini, cut into ½-inch pieces
- 2 cups thawed peas
- 1 tablespoon neutral cooking oil
- 1 lb baby potatoes, cut into bite-size pieces
- 1 tablespoon Dijon mustard
- 2 tablespoons chopped fresh chives
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Simmer the potatoes in water for 12–15 minutes, until tender; drain well.
- Heat the neutral oil in a large skillet over medium heat. Add zucchini, cut into ½-inch pieces and thawed peas. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Whisk Dijon into the prepared seasoning mixture. Toss with the warm potatoes and vegetables; finish with chives.
