Sumac Ground
Ground sumac is a tart, fruity spice with a lemon-like edge and a deep red color. It brings brightness to food without adding liquid.
Sprinkle it over roasted vegetables, fish or chicken; whisk it into salad dressing, yogurt sauce or a marinade. Add it near the end of cooking when you want its sharp, citrus-like flavor to stand out.

Eggplant & Pepper Crunchy Lettuce Cups with Sumac Ground

Ingredients
- 1 teaspoon Sumac Ground
- 1 tablespoon Arbequina Extra Virgin Olive Oil
- 1 tablespoon lemon juice
- 2 cups eggplant, cut into ½-inch cubes
- 2 cups bell pepper, diced
- 1 tablespoon neutral cooking oil
- 1 cup cooked brown rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 8 large lettuce leaves, washed and dried
- ¼ cup chopped roasted peanuts
Method
- Mix the featured seasoning with the olive oil and lemon juice.
- Heat the neutral oil in a large skillet over medium heat. Add eggplant, cut into ½-inch cubes and bell pepper, diced. Cook for 3 minutes, then add ¼ cup water, cover and cook for 8–15 minutes, until tender. Uncover to evaporate excess water.
- Stir in the cooked rice, chickpeas and seasoning mixture and heat through. Let cool slightly.
- Spoon into the lettuce leaves and top with peanuts. Serve immediately.
