In Asia, the bright red berries are used to flavor teas, wines, and jelly, or they are used in soups, meat and vegetable stews and a rice porridge called conjee. As a tea, the whole berries are often combined with other herbs, such as licorice root and astragalus root.

Raspberry & Lemon Spiced Chia Pots with Lycii/Goji Berry

Serves: 2

Ingredients

  • 1 tablespoon Lycii/Goji Berry
  • 1 cup water
  • 1 cup raspberries
  • 1 teaspoon finely grated lemon zest
  • ¼ cup chia seeds
  • 2 teaspoons Lemon Sugar

Method

  1. Simmer the dried berries in 1 cup water, covered, for 8 minutes. Keep the softened berries in the liquid and top back up to 1 cup.
  2. Dissolve the sugar in the prepared mixture and cool. Stir in the chia seeds and lemon zest. Stir again after 10 minutes to break up clumps.
  3. Cover and refrigerate for at least 4 hours. Divide into two bowls and top with the fruit.
