Ginger Root, Crystallized Sliced
Crystallized ginger, also called candied ginger, consists of the peeled rhizome of the ginger plant that is cooked in sugar until tender. Aside from its use as a confection, crystallized ginger root is added to tea and other hot beverages for sweetness and spice.

Blueberry & Maple Spiced Rice Pudding with Ginger Root, Crystallized Sliced

Ingredients
- 1 tablespoon finely chopped Ginger Root, Crystallized Sliced
- 1 cup water
- 1 cup blueberries
- 2 teaspoons pure maple syrup
- 1½ cups cooked rice
- 1 cup milk or oat milk
- 2 tablespoons Maple Sugar
Method
- Stir the Ginger Root, Crystallized Sliced into 1 cup warm water until evenly mixed.
- Combine the prepared mixture, cooked rice, milk, sugar and maple syrup in a saucepan. Simmer gently for 15–20 minutes, stirring often, until creamy.
- Fold in the fruit and warm for 2 minutes. Divide into bowls. Refrigerate leftovers promptly.
