Carob Bean Pods
Dried carob pods come from the carob tree. They have a naturally sweet, cocoa-like aroma with their own mild, toasted flavor rather than the bitterness of dark chocolate.
Use the pods in tea and coffee blends, or prepare them for grinding in baking according to the package directions. Their flavor pairs with cinnamon, vanilla and dates.

Cherry & Almond Chilled Spiced Fruit Soup with Carob Bean Pods

Ingredients
- 1 tablespoon chopped Carob Bean Pods
- 1 cup water
- 2 cups sweet cherries, pitted and halved
- 2 tablespoons toasted sliced almonds
- 2 teaspoons Vanilla Bean Sugar
- ¼ cup unsweetened apple juice
Method
- Simmer the carob pod pieces in 1 cup water, covered, for 10 minutes. Strain out all hard pieces and top the liquid back up to 1 cup.
- Dissolve the sugar in the prepared mixture and refrigerate until cold.
- Blend the prepared mixture, half the fruit, apple juice and almonds until smooth. Divide into two bowls and scatter the remaining fruit over the top. Serve chilled.
